What Really Happens When You Eat Beets?

Beets have earned a reputation as one of the most nutritious vegetables, thanks to their impressive combination of vitamins, minerals, antioxidants, and natural plant compounds. Whether eaten roasted, boiled, pickled, or added to salads, they can be a healthy addition to a balanced diet and may offer several benefits for overall wellness.

One of the best-known benefits of beets is their high nitrate content. Inside the body, these natural nitrates can be converted into nitric oxide, a compound that helps relax blood vessels and improve blood flow. Because of this, some studies suggest that eating beets may help support healthy blood pressure, improve exercise performance, and enhance endurance in some people.

One effect that surprises many people is that beets can temporarily turn urine or stools pink or reddish—a harmless condition known as beeturia. Although it can look alarming, it is usually nothing to worry about and typically disappears within a day or two after eating beets. However, if red urine or stools occur without recently eating beets or other red-colored foods, it’s important to seek medical advice.

Beets are not a miracle food, but they are packed with nutrients that can support a healthy lifestyle when enjoyed as part of a balanced diet. Their unique flavor, vibrant color, and impressive nutritional profile make them a popular choice for anyone looking to add more wholesome foods to their meals.
